Caprese pasta salad

Caprese Pasta Salad
Serves 4 Prep 10 minutes Cooking 15 minutes

250g farfalle
350g blended medley tomatoes, halved
1 roma tomato, sliced
60g pkt Coles Australian baby Rocket
100g cherry bocconcini, coarsely torn
½ cup basil leaves
2 tbs olive oil
1 tbs balsamic glaze
Shaved parmesan, to serve

Cook the pasta in a big saucepan of boiling water following packet instructions or till al dente. Refresh underneath chilly water. Drain neatly.
Place the pasta in a big serving bowl with blended tomato, rocket, bocconcini and basil. Drizzle with oil and balsamic glaze. Season. Gently toss to mix. Sprinkle with parmesan.
