12 oz firm Spanish Chorizo (mild or spicy, or a mix)
2 to 3 Sweet Bell Peppers (red, green, yellow, orange, purple, cut in stripes.
Use 3 peppers if they are smaller in size.
5 to 6 cloves Garlic, slivered
2 medium Beefsteak Tomatoes, chopped
1/2 tsp sweet smoked Spanish Paprika
¼ tsp Red Chili Flakes (optional)
1 tbsp Smoked Paprika (Pimenton de la Vera)
1 tsp Sweet Paprika
2 Bay Leaves
6 medium New, Yukon Gold, or Red Potatoes
3 to 6 cups cold Water (enough to cover potatoes)
1 tsp of Thyme, dried
Pinch of sea salt, to taste
Chopped fresh Parsley
