Pasta Salad with Tomatoes, Cucumbers and Grilled Green Onion-Crushed Olive Vinaigrette

Ingredients
1 bunch scallions
1/3 cup plus 2 tablespoons extra-virgin olive oil
8 oz. fusilli pasta
4 tablespoons Chardonnay vinegar
1 tablespoon Dijon mustard
Sea salt and freshly cracked black pepper
2/3 cup kalamata olives, pitted and chopped
1/2 cup cherry tomatoes, halved
1/4 crimson onion, finely diced
One 6-ounce piece provolone cheese, diced
1/4 cup contemporary dill, chopped
1/4 cup contemporary parsley, chopped
2 cups baby arugula
Directions
Special apparatus: a grill
Preheat a grill to prime.
Toss the scallions in 2 tablespoons of the olive oil and season with salt and pepper. Grill the scallions till the bulbs are delicate and the vegetables are neatly charred, 6 to eight mins, turning each few minutes. Set apart to chill. When the scallions are cooled, chop them finely.
Bring a big pot of salted water to a boil for the pasta. Add the pasta and prepare dinner till al dente, about 2 mins lower than the package deal directions.
In a medium bowl, whisk in combination the vinegar and mustard. Season with salt and pepper. Whisk in the remainder 1/3 cup olive oil. Add the scallions and toss to coat.
When the pasta is completed cooking, drain and upload to the French dressing. Add the olives, tomatoes, crimson onion, provolone, dill, parsley and arugula. Toss to mix.

I make mine like this as well but I let my pasta cool down. I use feta cheese and substitute the arugula with cucumbers. Not nice to mistreat the ladies Geoffrey!!! No one cares about your food if you’re a bad host. Be nice! People may not admit it but everyone loves a good mayonnaisey macaroni salad! It’s so good if you make it right. No store bought stuff.

His salad looks amazing but I'd have to add a fruit to add the sweet element to cut thru the vinegar
Made this today and it turned out great! I deleted the olives(no one in my family likes them). I forgot the parsley(it's hard to find all of these ingredients). I could not find Chardonnay vinegar(only online) so I substituted normal white wine vingear. I made breadsticks to accompany the salad. I'm in heaven right now… I'm usually not a fan of what GZ makes but this one was a winner.
