  1. Olive oil and butter is not used to keep olive oil from burning. It is to keep the butter from browning. If you cook with butter, it will brown fast because it has a lower smoking point. If you add a little oil to it….olive oil or whatever kind, it raises the smoking point of the butter and it won't brown the butter so fast.
