Olive Fried Rice: Healthier Recipe

40gs Chicken breast meat
1/2 teaspoon Reduced salt fish sauce
1 teaspoon olive oil
1/2 teaspoon tsp Sugar
1/2 teaspoon toasted white seasme seed
Coriander leaves
Teochew black olive
Cooked Brown rice (left over-night for extra texture)

1. Process the teochew olive with two cloves of garlic to get an olive paste.

2. Beat and fry the egg until it’s 70% cooked. Set apart the cooked egg.

3. Chop the rooster into smaller slices. Stir-fry the rooster with some garlic and olive oil, until it’s 70% cooked. Set apart.

4. With slightly of olive oil, fry the olive paste until it’s aromatic.

5. Add the cooked brown rice. Stir frequently to make sure even coating of olive paste at the rice.

6. Add part a teaspoon of fish sauce and part a teaspoon of sugar to the wok, and proceed to fry for 1 – 2 mins.

7. Add the cooked egg and rooster again into the wok, and fry for 1 minute.

8. Serve with white sesame seed and coriander.

    rice!!! This is just awesome!! I had it few times in china town when I was in Singapore. And is craving for that bowl of rice ever since! Tried to recreate it but didn’t taste like the one I had in SG. Gonna try to make it again!
