  4. Proudly Nigerian,most of our soups are cooked with palm oil but the question i would like to ask you Dr Eric is that at what temperature should palm oil be fried with it's ingredients inside it and are there any consequences of frying it at a certain degree?

  5. We were told palm oil has high cholesterol so a lot of people stopped eating it and change to corn oil. If African scholars would do research and own their own products, we would not be jacked around, do you blame them for thinking Africans are fools?

  6. But it's not red palm oil that is hidden in so many foods we eat is it? It's refined and transparent so even the carotene is removed? In the UK, bottles labelled 'vegetable oil' are actually palm oil and they are just a pale yellow. I believe that it's garbage which is damaging our health, because it's in almost everything, but not the healthy red stuff that Africans eat.

I wish to point out something stupid in this presentation – he says he will post in his comments three articles that show that "saturated fats are not dangerous, especially compared to unsaturated fats." But the articles don't show that – AT ALL! One shows that polyunsaturated fat reduces heart risk when it displaces saturated fat (no surprise there). Another shows that polyunsaturated fat protects against atheroschlerotic plaque. The third article is a metastudy which I found unconvincing. But the "doctor" here makes a VERY MISLEADING statement, as if saturated fat were not harmful. But it does in many cases correspond with higher cholesterol, and A recent review published in the Journal of the American College of Cardiology put it even more simply in its recommendations for patients. When it comes to coconut oil, it says “avoid.”
