The fully organic production of this oil begins within the fields, where the olives are given rigorous phyto sanitary attention. They’re then picked carefully, by hand at the proper stage of ripeness, and only right away from the tree; windfalls are discarded. The selected olives are in easiest condition when They’re taken into the oil mill. At the same day They’re picked, the olives are stone milled.
