Here’s a simple recipe for Peri Peri Sauce with Herb Rice:

Peri Peri Sauce

2 red bell peppers, chopped
1-2 red chilies (adjust to taste), chopped
4 garlic cloves, minced
1/4 cup olive oil
1/4 cup lemon juice
2 tbsp red wine vinegar
1 tsp smoked paprika
1 tsp dried oregano
1 tsp ground cumin
Salt to taste

Preheat the oven to 200°C (400°F). Place the chopped bell peppers on a baking sheet and roast for about 20 minutes until they are soft and slightly charred.
In a blender, combine the roasted bell peppers, red chilies, garlic, olive oil, lemon juice, red wine vinegar, smoked paprika, oregano, cumin, and salt. Blend until smooth.
Taste and adjust the seasoning if needed. Transfer the sauce to a jar and refrigerate until ready to use.

Herb Rice

1 cup basmati rice
2 cups water or chicken broth
2 tbsp olive oil or butter
1 small onion, finely chopped
2 garlic cloves, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint, chopped (optional)
Salt and pepper to taste

Rinse the basmati rice under cold water until the water runs clear.
In a medium saucepan, heat the olive oil or butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
Add the minced garlic and cook for another 1 minute.
Add the rice to the saucepan and stir to coat it with the oil and onion mixture.
Pour in the water or chicken broth, add a pinch of salt, and bring to a boil.
Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
Remove from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork and stir in the chopped parsley, cilantro, and mint (if using). Season with salt and pepper to taste.
Serve the herb rice with a generous drizzle of Peri Peri sauce on top or on the side. Enjoy!
