  2. The best EVOO is not clear but cloudy. Clear oil has been filtered and a lot of the nutrients are missing. We have an olive farm in Italy and don’t filter our oil. Much better taste. Healthier.

  3. Buy oils in glass or plastic bottles. If you buy bulk tins, then quickly put into glass or plastic bottles and put into dark storage. Acidity will eventually turn the oil rancid and eat into the metal creating the metallic taste – total loss of product. Even selling oil in tins – check the date of processing so you dont get acidic and metallic oil from the start.
