Lemon olive oil Cake with Honey Meringue(Refined sugar loose!)🍋 Summer requires a refreshing dessert and this easy lemon olive oil cake crowned with citrusy fluffy meringue is best for each entertain and your treasured tea time😉

Ingredients:

For the Cake
150g complete wheat flour
36g arrowroot starch
1 tsp. baking powder
¼ tsp. baking soda
2 massive eggs, at room temperature
¾ cup honey
¼ cup extra virgin olive oil, plus extra for the pan
¼ cup yogurt
Zest from 1 lemon(about 1 tsp), plus extra for the topping
3 Tbsp. lemon juice
½ tsp. sea salt

For the Meringue
3 eggs whites, at room temperature
¼ cup honey
Pinch sea salt
2 Tbsp. lemon juice

Instructions:

1. Preheat the oven to 350°F. Grease 8-inch spherical cake pans with olive oil and line the backside with parchment paper.
2. In a big bowl, sift in combination flour, starch, baking powder, and baking soda. In every other massive bowl, upload eggs and honey.
